Fixate Granola
You know those times when you get home from work and you're starving but dinner won't be ready for an hour? You're craving salty, you're craving sweet, you just want something! Maybe something crunchy!! I have found the answer!! Fixate Granola!! Oh my goodness, I totally love it! I love all kinds of granola but wanna know what is so special about this granola? No sugar!! And of course it is delicious. This is a winner in my fam!! It's great right out of the oven but it's also wonderful as cereal in the morning! Yum! Enjoy!
Fixate Granola (from Fixate)
INGREDIENTS:2 1/2 cups of quinoa flakes or gluten free old fashioned rolled oats (I use regular old fash oats)
1/2 cup sliced raw almonds
1/2 cup chopped raw walnuts
1/2 cup shredded unsweetened dried coconut
1/4 cup chopped dried apricots (I leave these out)
1/3 cup unsweetened dried cranberries (I leave these out bcuz I'm the only one who likes in my fam)
1 1/2 tsp ground cinnamon
1/4 tsp sea salt (or Himalayan salt)
1/4 cup pure maple syrup
3 tbsp extra-virgin organic coconut oil
1/2 cup unsweetened applesauce
COOKING INSTRUCTIONS
Preheat the oven to 300° and line the greased cookie sheet with parchment paper.
Combine all the dry ingredients together in a mixing bowl and mix well.
Cook the maple syrup, coconut oil, and applesauce in a small saucepan over low heat and stir it for the entire cooking time of 4 to 5 minutes. You want to make sure the oil has melted out.
Pour the syrup mixture over the dry mixture stirring it until well coated and place the mixture onto the cookie sheet in a thin layer.
Bake the granola for 40 to 45 minutes, stirring the mixture about every 15 minutes. Bake the granola until it’s a light golden brown crispy. Allow it to cool..

For my 21 Day Fixers, the granola account for 1/2 yellow, 1/2 purple and 1 tsp. for 2T of granola.
Made this today. Super easy and super yummy! I like that its not too sweet.
