Sweet Potato Fries

Yesterday I posted about my sister's delicious Broccoli Salad that we had for dinner last night.  Well the other side dish we had were these awesome Sweet Potato Fries!! I am so loving my new "The Pioneer Woman Cooks Dinnertime".  All of the ones I have tried have been winning recipes!! Again, my husband usually does not like sweet potatoes but guess what?  He likes these!! Yay!!

Sweet Potato Fries (from the Pioneer Woman)

Ingredients
6 large sweet potatoes
1/2 cup (1 stick) butter
2 garlic cloves, pressed or minced
1 tsp seasoned salt or kosher salt
1 tsp chili powder
1/2 tsp black pepper
1/2 cup mayo
2 tbsp sriracha or ketchup
kosher salt, for sprinkling

Directions
1.  Preheat oven to 450.

2.  Peel the potatoes, then slice into wide strips.  Stack and slice into thin sticks.

3.  Place potatoes in a large bowl.

4.  Melt butter in small skillet or saucepan over medium-low heat, then use a spoon to skim off the foam.  Add the garlic, seasoned salt, chili powder, and pepper, and stir all together.

5.  Pour the butter mix over the potatoes and use your hands to toss them to coat.

6.  Place on 2 rimmed baking sheets to avoid crowding.

7.  Bake for 15-17 minutes, shaking pans a couple times during baking.  Let them rest on baking sheets for 5 minutes before serving.

8.  To make a quick dipping sauce, combine the mayo and sriracha (or ketchup) and stir to combine. 

9.  Pile the fries on a plate next to the sauce and go for it!
