Zoodles
I've been wanting to try zoodles for a long time now. I keep hearing about them and the name is just so fun! We were going to do Zoodles and Meatballs tonight but then it was nice out to grill and Robbie was craving steaks so we decided to do steaks with grilled onions and mushrooms and a sampler of zoodles! We made most of them as a cold salad and then I cooked a smaller amount in a pan and topped with marinara sauce and parmesan cheese. They were both really good and Robbie was very surprised that he liked them both!
We made our zoodles with a spiral cutter but you can also use a vegetable peeler. I felt like we were playing with play-doh! It was so fun!
To cook zoodles just put a little olive oil in the pan and cook on medium heat for 3-5 minutes. Then we topped ours with marinara sauce.

Roasted Corn & Zucchini Salad with Chili Lime Vinaigrette (www.withsaltandwit.com)
- Ingredients
- 2 ears of corn
- 2 large zucchini, spiralized with the smallest blade
- ½ large red onion, diced
- Optional: Queso Fresco or Cojita
- Salt and pepper to season corn
- Vinaigrette:
- ½ tablespoon apple cider vinegar
- 1 tablespoon olive oil
- Juice and zest of 1 lime
- ½ teaspoon chili powder
- ¾ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon honey
Instructions
- Prepare grill.
- Pull husks down on corn. Spray with non-stick cooking spray and season with salt and pepper.
- Grill until slightly charred.
- Meanwhile prepare vinaigrette; combine all ingredients and mix well. Toss with zucchini noodles, red onion and cheese, if using.
- When corn is done and cooled slightly. Cut kernels off. Top salad with corn and serve!
*We used frozen corn and cooked it instead of ears of corn on the grill.
