Naked Burrito Bowls
This week I started a 5 Day Clean Eating Dinnertime Challenge on facebook with anyone who wanted to join. I, along with some of my coaches are posting a recipe for dinner every day this week and then everyone in the group can make the meal and post pics. This was the meal today! Super easy and yummy! The kids had a lot of fun with it and when I asked if they liked it my daughter said something along the lines of, "Well, duh!"
Naked Burrito Bowls

Ingredients
4 Frozen Chicken Breasts
1 C of Salsa
1 Can of Black Beans (optional, rinsed and drained)
Lettuce
1 Onion
2 Tomatoes
Fresh chopped cilantro
Diced avocado or homemade guacamole
4-6 corn tortillas

4-6 corn tortillas
To make the shredded chicken, put 4 frozen chicken breasts in the crockpot with 1 cup of salsa, optional black beans, and 2 tablespoons of water. Cook on high for 4 hours and shred with 2 forks. You can also cook on low for 6-7 hours if you need to. Stir well before serving.
For the burrito bowl, combine chicken and all other ingredients you'd like into a bowl. Serve with homemade chips. For chips, take corn tortillas and cut into chips with a pizza cutter, place on a cookie sheet, spray with cooking spray and add a little salt. Cook on 350 degrees for 10 minutes or until crispy.
