Chocolate Banana Nut Muffins
So today I was on facebook and saw a recipe that involved peanut butter, chocolate chips, banana all made into a muffin AND with no sugar or flour so I just had to try it out!! Introducing...Chocolate Banana Nut Muffins!! These are a nice treat! I had one warm right out of the oven and it was so delicious that I had to have another. Of course I had to have a cup of coffee along with it, too.
Chocolate Banana Nut Muffins (www.healthandfoodjunkie.com)
- 2 ripe bananas
- 2 eggs
- 1 cup all natural peanut butter
- 1/4 cup honey
- 1 tsp baking powder
- 1/2 tsp baking soda (not in original recipe)
- 1 tsp ground cinnamon (not in original recipe)
- 1 tsp vanilla extract
- pinch of salt
- 1/4 cup flax meal (not in original recipe)
Add all the above ingredients into a blender and pulse till smooth.
Fold in:
- 1/4 cup dark chocolate chips or cacoa nibs
- 1/4 cup chopped walnuts or nut of choice
Pour into a muffin cups about 3/4 full and top with desired toppings.
Bake at 400F for 14-18 minutes.
Yields 12 – 15 muffins.
