Southern Spiced French Toast with Bananas and Pecans
So lately I have realized how much I like bananas! I've been making all kinds of banana dishes without even realizing it. I love french toast, too so these are fantastic!! This is one of the recipes that came with my new workout program, Country Heat. So easy, delicious, and good for you, too!! The whole family loved these and my husband was surprised that he liked the bananas on top.
Southern Spiced French Toast with Bananas and Pecans
Ingredients:
Directions
- 4 large eggs
- 1/4 cup unsweetened almond milk
- 1 tbsp pure maple syrup
- 1 tsp pumpkin pie spice
- 4 slices whole grain bread
- 2 tsp coconut oil
- 1 large banana
- 1/2 cup chopped raw pecans, toasted
Directions
- Combine eggs, almond milk, maple syrup, pumpkin pie spice in a shallow pan; whisk to blend.
- Soak each slice of bread in egg mixture for 2 minutes, turning halfway.
- Heat oil in medium nonstick skillet over medium high heat.
- Add bread; cook for 2-3 minutes on each side, or until golden brown.
- Top each slice evenly with banana and pecans; serve immediately.
