Lemon Dijon Pork Chops
Well it's almost been a week since I've posted some of the new recipes that we've tried out but now it's Spring Break so I'll be throwing out a lot of new recipes at ya this week!!
Tonight's meal was delicious!! My husband is a hard grader and he gave the pork chops a 9 and the grilled veggies and slow cooker sweet potatoes an 8.25!!
Lemon Dijon Pork Chops (www.fitmomangelad.com)
ingredients
- 4 pork loin chops
- 2 T olive oil
- 2 T lemon juice
- 2 T Dijon Mustard
- 1 tsp oregano
- 4 cloves garlic, minced
- 1/2 tsp thyme
- 1 tsp onion powder
- 1 tsp Worcestershire sauce
- 1 tsp white wine vinegar
- 1/2 tsp sea salt
- 1/2 tsp black pepper
instructions
- Place meat into a gallon size zipper bag and add all ingredients
- Seal bag and rub the ingredients into the meat until distributed evenly.
- Let marinade in the refrigerator for at least 3 hours
- Remove meat from bag and place on hot grill and grill until cooked through and meat is no longer pink in the center.
(Top with feta cheese if desired).
Slow Cooker Mashed Sweet Potatoes (Lisa M Decker)
Ingredients:
- 2 lb. sweet potatoes, peeled and cut into 1/2 inch slices
- 1 cup apple juice (NO SUGAR ADDED - 100% JUICE)
- 1 Tbsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 tsp. allspice
- 1/4 tsp. ground cloves
- Pecans (optional)
- Honey or maple syrup to taste (optional for a sweeter taste)
Directions:
- Peel and cut sweet potatoes and place them in the slow cooker.
- Add 1/2 cup of the apple juice as well as the spices.
- Cook on low for 4-5 hours, until the potatoes are tender.
- Once potatoes are fully cooked, use a hand blender to mix the sweet potatoes inside the slow cooker. While doing so, add the other 1/2 cup of juice. You can season with more cinnamon and nutmeg. If you prefer a sweeter taste, you can mix a dab of honey or maple syrup as well.
- Top with pecans.
- Serve and enjoy!
