Baked Tilapia
Last week during my Clean Eating Dinnertime Challenge Group we had a night that we made fish. It's nice to change it up sometimes and it's so good for you! I got this recipe from my friend, Meg who is also a Team Beachbody Coach. We paired it with a baked sweet potato (I'm obsessed with sweet potatoes), broccoli, and a salad with strawberries, pecans, and feta cheese. Oh and I love to squeeze lemon juice on my fish so we had that, too!

(from Meg Biddle)
Directions: Preheat your oven to 450. Can even use frozen fish. Spray the bottom of your pan with non-stick spray, sprinkle parmesan cheese on top. Sprinkle garlic salt (careful, the parmesan can make it salty, depending on how much you use, so watch how liberal you are) over top. Take a tbsp of butter and slice in thirds, and set directly on top of the fish. Cook for about 30 minutes, depending on how done you like your fish. To have a crispy layer on top, put under the broiler for 2-3 minutes.
