Cauliflower Pizza
Last fall I went and stayed with one of my friends, Mary at her home in Florida. While I was there she made me Cauliflower Pizza. I have to say, I was a tad bit skeptical but once I tried it I couldn't believe it. It was delicious! Well tonight I finally gave it a try myself! I got this particular recipe from a coaching friend of mine. My kids didn't even notice and gave it 2 thumbs up!! I will definitely be making this again.

Cauliflower pizza crust:
•1 cauliflower head (grated or pulsed in a food processor)
•1 egg
•1/3 c. almond flour or whole wheat flour
•1/4 c. grated Parmesan cheese
•1/4 c. shredded Mozzarella cheese
•dash of garlic powder, parsley, oregano & any other seasonings of choice

Directions:
After grating the cauliflower, microwave in a bowl covered with a paper towel for 4 minutes. When cooled; in a strong paper towel or kitchen towel wring out as much water out of the cauliflower.
Mix all ingredients together and flatten into a pizza/cookie sheet. Bake for 12-15 min. without topping and additional 10-12 min. with toppings.
Top your crust with sauce, mozzarella or feta, and veggies/toppings of choice.
