Grandma's Italian Pasta
(adapted from Weber's Real Grilling)
Ingredients
Sauce
2 tbsp extra virgin olive oil
1/2 medium yellow onion, finely chopped
2 medium garlic cloves, thinly sliced
1/4 cup shredded carrot
1 tsp dried oregeno
1 can (28 oz) crushed tomatoes
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1 lb lean ground sausage
1/4 c finely chopped fresh basil
1 lb pasta
Directions
1. To make the sauce: In a medium saucepan over medium heat, warm the oil. Add the onion and garlic. Cook for 5 minutes, stirring occasionally. Add the carrot and oregano. Cook for 5 more minutes, stirring occasionally. Add crushed tomatoes. Season with the salt and pepper. Simmer for 10 minutes, stirring occasionally.
2. Brown the ground sausage until no longer pink. Keep warm.
3. In a large pot of boiling salted water, cook pasta until tender. Drain the pasta and return it to the pot. Add the sauce. Stir to combine. Cover the pot for 1 minute to allow the pasta to absorb some sauce. Serve and sprinkle with freshly grated parmesan cheese.
