Fish Tostadas
Oh man! I love fish tacos, so when I ran across this recipe for 21 day fix approved fish tostadas, I knew I just had to try them! Last night the kids had Girl Scouts and soccer so it was a late night which meant I needed a quick dinner! Fish Tostadas to the rescue and they were really good!!
21 Day Fix Fish Tostadas

Ingredients
- 2 6-ounce tilapia filets
- 1/2 salsa
- 4 corn tortillas
- 4 tablespoons guacamole
- 1/4 cup diced tomatoes, diced
- 1/8 cup chopped cilantro
- 2 tablespoons Cotija cheese (I used shredded parmesan)
- 1/2 cup shredded iceberg lettuce (I used chopped romaine)
- Ground black pepper, to taste
Instructions
- Preheat oven to 400 degrees.
- Place tilapia in a glass-baking dish and cover with salsa, (about 1/4 cup each). Season each piece with ground black pepper. Place in oven and cook 10-15 minutes or until fish is cooked and flakes.
- Meanwhile, lay tortillas flat on a baking stone and bake in oven until completely crisp, but not brown, about 6-8 minutes.
- Spread 1 tablespoon guacamole on each tortilla.
- Flake apart with two forks and then evenly distribute on top of guacamole.
- Top the fish with with 1/8 cups salsa from the baking dish.
- Top each tostada with 1/8 cup of lettuce, tomatoes, and cilantro. Then sprinkle with 1/2 tablespoon of cheese.

- Portion Control Containers: 1 Yellow, 1 1/2 Red, 1 Blue, 1/2 Green
