Clean Eating Shrimp Fajitas

Man, oh man, do I love shrimp!  It may just be my favorite meat these days.  Sooo, I know I've shared a recipe for Shrimp Tacos before but this recipe is totally different.  It's Shrimp Fajitas!  My kids are with Grandma and Grandpa tonight and my son isn't a big fan of shrimp, plus these are a little spicy, so I thought it was a great night to try them out!  This was a super quick meal to whip up, and my husband and I enjoyed our fajita dinner on the back deck on this beautiful, fall evening.  I hope you enjoy them as much as we did!  


Clean Eating Shrimp Fajitas

INGREDIENTS

2 tbsp extra virgin olive oil
1/2 lb of shrimp peeled and deveined
Fiesta lime seasoning (Mrs. Dash) to taste (I used Tastefully Simple's Chipotle Seasoning but you can use any kind of seasoning with a spicy kick.  I also added lime juice.)
1/4 tsp himalayan sea salt
1 small onion thinly sliced
1 green or red pepper thinly sliced
Hard or soft whole grain tortillas (I used corn tortillas) or you can use leaf lettuce instead of the shell
Optional Toppings
Lime to squeeze on the shrimp
Greek yogurt instead of sour cream
Black beans
Avocado
Tomatoes
Cheese (I used bleu cheese)
Lettuce
Salsa
Brown rice
Steamed corn

DIRECTIONS


Place oil in pan and heat on medium. In a small bowl combine the shrimp, fiesta lime seasoning, sea salt and stir. Then place in pan and cook 4 minutes or until done. Remove shrimp from pan and add in the onion and peppers and brown. Stir in shrimp and toss to combine then spoon into whole grain tortillas hard or soft!
