Pumpkin Turkey Chili
Wow, have I gotten out of the habit of posting my recipes! Here's to a new week! My goal is to post one of our "2 thumbs up" recipes at least twice a week. The recipe for today? Pumpkin Turkey Chili! When my husband saw this on our weekly menu he was a little skeptical. But guess what? He actually enjoyed it! And the kids did, too.
It is October which means it's pumpkin time! You probably see ads for Pumpkin Spiced Lattes and see all kinds of pumpkin treats and recipes all around you. I'll be sharing quite a few pumpkin recipes as well. I hope you enjoy this chili as much as we did. ;)

Pumpkin Turkey Chili

Pumpkin Turkey Chili
Serving size 1 1/2 cup. Makes 6 servings.
Ingredients
1.5 lb COOKED ground turkey
1/2 cup chopped onion
1.5 cups chopped green pepper
1 can diced tomatoes, low sodium (or we chop up our own)
1 large can of low sodium tomato sauce
1 can red kidney beans
1 can black beans
1/2 cup frozen sweet corn
1 can puréed pumpkin (NOT pie filling)
1 tsp garlic
1 tbsp chili powder ( we add a little more to kick up the spice)
1/2 tsp cumin
Place all in crockpot on low for 4-6 hrs.
