21 Day Fix Approved Broccoli Cheese Soup
I've been looking for a healthy broccoli soup for awhile and I think I found a winner! My kids were even fans. Score!! ;) I liked that it involves other veggies, too-carrots and cauliflower. A great way to get in a lot of vegetables!
We were going to have chicken burgers with it but ran out of time so had leftover Basil Pesto Chicken Pizza instead. It was a good combo!!

21 Day Fix Approved Broccoli Cheese Soup
Ingredients:
2 tbsp butter
2 medium carrots diced
1 med. onion diced
2 cloves of garlic minced
4 cups vegetable broth ( 1 32 oz container)
4 cups broccoli rough chopped
2 cups cauliflower rough chopped
Salt & Pepper to taste
2 cups of broccoli chopped into smaller pieces
1 1/3 cups shredded cheddar
2 medium carrots diced

4 cups vegetable broth ( 1 32 oz container)
4 cups broccoli rough chopped
2 cups cauliflower rough chopped
Salt & Pepper to taste
2 cups of broccoli chopped into smaller pieces
1 1/3 cups shredded cheddar
Directions:
In a large pot, over medium heat, melt the butter and add the carrots, onions and garlic. Cook until they start to softened.
Add in the rough chopped broccoli, cauliflower and broth. Season the pot with salt and pepper. Cover and let simmer until all the vegetables are very soft.
While the veggies are simmering, cook the little pieces of broccoli in the microwave for 5 minutes until they are a bright green and set aside.
Then puree the soup in batches in either a blender or a Vitamix. Return soup to the pot when done.
Heat pot on low and stir in the cheese and cooked broccoli. Mix until the cheese melts.
Add in the rough chopped broccoli, cauliflower and broth. Season the pot with salt and pepper. Cover and let simmer until all the vegetables are very soft.
