Pecan Banana Pancakes
My family and I went to Gatlinburg a few weeks ago and ate at a lot of awesome pancakes houses! I love pancakes and breakfast so I was a happy camper!! One morning we were at a pancake house that had so many great choices. I couldn't decide and so chose a healthier option rather than their pecan pancakes. Ever since I've been craving them so decided to try out a healthy recipe at home. I found a winner! These are delicious and I enjoy them topped with pecans or walnuts and pure maple syrup.
Pecan Banana Pancakes
- INGREDIENTS
- 1 banana
- ⅛ cup maple syrup or pure date syrup
- 1 Tbsp coconut oil
- ½ tsp pure vanilla extract
- 1 tsp baking powder
- 1 cup whole wheat flour
- ⅓ cup crushed pecans
- 1 cup almond milk
- 1 Tbsp chia seeds (soaked in water)
- 1 Tbsp almond butter
- coconut oil for greasing the pan
Toppings:
- 1 banana
- 4-5 strawberries
- a handful of crushed pecans
- maple syrup
DIRECTIONS
- Soak the chia seeds in small amount of water.
- In the meantime, place all other ingredients in a medium sized bowl.
- Add the chia seeds and mix well together.
- Heat a pan on the stove and grease with melted coconut oil.
- Pour in small amounts of the mixture to make small pancakes (you can make several at a time if you use a bigger pan).
- Add toppings and enjoy!
