Roasted Brussels Sprouts with Bacon

I've tried several brussels sprouts recipes over the past few years and haven't had much luck getting my husband to like any of them... until now!  I should've known.  Bacon usually does the trick!  



Roasted Brussels Sprouts with Bacon

Ingredients
1 lb brussels sprouts
1 tsp olive oil
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp sea salt
1 medium red onion, diced
6 slices bacon cut in 1/2 in pieces

Directions
1. Rinse brussels sprouts and thoroughly dry. (damp veggies will steam instead of getting crisp)
2. Use a sharp chef's knife to trim bottom of core. (flat end)
3.  Remove any brown or yellowed leaves.
4.  Halve the sprouts lengthwise.
5.  Toss sprouts with the olive oil, garlic powder, cayenne pepper, and sea salt.
6.  Add the diced onion and bacon, toss.
7.  Spread mixture in even layer on greased baking sheet.
8.  Roast in oven at 400 for 40 minutes, tossing halfway through cooking.
9.  Serve warm.

*Toss with pine nuts, optional
