Easy Breakfast!
Sometimes you just don't have a ton of time in the morning and want something quick yet good for you, right? Today I'm sharing a few of my personal fave easy breakfasts!
Easy Breakfast Ideas
Cinnamon Apple PB Oatmeal
Cinnamon Apple PB Oatmeal
Ingredients
1/4 cup quick cooking steel cut oats
3/4 cup water
1 apple chopped
1/4 cup mix of pecans and walnuts
tsp or 2 of peanut butter
Cinnamon to taste
Directions
Cook oats according to package directions. My directions say to boil 3/4 cup water, add oats, simmer on low for 5-6 minutes. Pour oatmeal into bowl, sprinkle in cinnamon, and stir in peanut butter. Add chopped apples and sprinkle more cinnamon on top. Top with nuts and enjoy.
Asparagus & Eggs with Toast
Ingredients
Asparagus
2 eggs over easy
Piece of whole grain toast
Directions
Roast asparagus in a 425 oven for 10-15 minutes or saute in pan. Better yet, to save time, roast the night before, refrigerate, and heat up in the morning and enjoy. Cook your eggs and toast your bread. Top toast with 5 or so asparagus spears, then top with eggs and enjoy.
Squash with Eggs & Toast
Ingredients
1 yellow squash or zucchini sliced up
optional: a few slices onion
2 eggs over easy
1 piece of whole grain toast
Olive oil
Directions
Slice up squash and onion, saute in oil in pan until tender. Cook your eggs and toast. Top toast with 1 egg, top squash with the other egg, and enjoy.
Chunky Monkey Shakeology
Ingredients
1 scoop chocolate Shakeology
1 tsp peanut butter
1/2 frozen banana
1/2 cup unsweetened vanilla almond milk
3/4 cup water
1 cup ice
Directions
Add all ingredients to blender and blend until smooth. If you like it extra thick just add more ice. If you like it not so thick, add less. Enjoy!! ;)
