I love oatmeal on a chilly day, but really I love it any time of year! I love that you can throw all the ingredients in the crockpot and can put those ripe bananas to good use. This is a hot, comforting meal that is full of flavor.

Slow Cooker "Baked" Oatmeal with Coconut, Blueberries, and Bananas
Ingredients
2 Bananas cut into 1/2 inch slices, the riper the better
1 1/2 cups Blueberries
3 tbsp Honey
1 cup Oats, quick-cooking
1/2 tsp Cinnamon, ground
1 pinch Kosher salt
1 tsp Vanilla extract
1 cup canned light coconut milk
1/4 cup shredded coconut
Directions
Coat the bottom of a 6 quart slow cooker with cooking spray. Arrange banana slices in a single layer on the bottom and top with half of the blueberries. In medium bowl, combine the oats, 2 tbsp of the walnuts, cinnamon, and salt. In separate bowl, whisk together the coconut milk, honey, and vanilla. Pour the liquid mixture over the oats, stir well, and pour into the slow cooker. Sprinkle the remaining 3/4 cup blueberries, the remaining 2 tbsp walnuts, and the coconut over the top. Cover and cook on low for 2 to 2 1/2 hours, until the oatmeal is cooked through. Serve warm.
